A HAMPSHIRE couple are hoping to bring a touch of Japanese cuisine to the taste buds of county residents after launching a unique sushi business.

After noticing a lack of sushi bars in Southampton and the surrounding areas, Matt and Hitomi Elliott decided to start an online sushi bar called Ai Sushi.

Hitomi, originally from Tokyo, used to work in a sushi bar in Canada and now makes the Japanese delicacy with her husband from their North Baddesley home.

The pair, pictured right, both of whom have day jobs, also offer Japanese theme nights where they deliver an educational hour about sushi.

Chopstick etiquette Dressed in traditional Japanese yukotas, the couple teach chopstick etiquette, explain all about the different kinds of fish and how it is made, against the backdrop of Japanese music provided by Hitomi.

The company was set up about six months ago but the pair are now hoping that their traditional dishes such as salmon nigiri and California rolls will take off across Hampshire.

Matt, 25, of Firgrove Close, who is a regional trainer for the Co-op, said: "It takes a minimum of three hours because it is labour intensive. We buy it fresh, make it by hand and prepare it on the day at home.

"So far we have had really good feedback from family and friends and places such as Romsey Market and Whiteley Village Market. But it's just trying to get people to try it. Once they do they love it."
