Ingredients

  • 395g pack ready-rolled short crust pastry,
  • 175g/6oz Kinvara organic smoked salmon, chopped,
  • 1 egg,
  • 4 egg yolks,
  • 300ml/pt double cream,
  • salt and freshly ground black pepper

Method

Remove pastry from pack and unroll on a lightly floured worktop. Roll out a little thinner than it is. Cut out rounds with a plain cutter to fit a 12 hole tart tin. Place pastry circles in tart tin and then cover with film and chill in the fridge for 20 minutes.
