A very tasty dish

Preparation time: 5 minutes

Serves: 4

45ml /3 tablespoons vegetable oil

1 large red onion, sliced

300g/12oz cooked new potatoes, sliced

75g/3oz chorizo sausage, sliced

6 Large Lion Quality eggs

Method

1. Heat oil in a frying pan, add onion and fry for two minutes.

2. Add potato and chorizo; fry for three minutes or until golden.

3. Beat eggs in a bowl with salt and freshly ground black pepper. Pour eggs into pan; cook without stirring until most of the egg has set – about six minutes.

4. Pop pan under a hot grill for two minutes until the top is set and golden. Cut into wedges and serve warm or cold.
