Hampshire-grown strawberries are appearing in farm shops throughout the county. The Chronicle's cookery expert, Venika Kingsland, can't resist their appeal. For her, it is a trip down memory lane
Ingredients
1 cup wholemeal flour
1 cup plain white flour
2 tspn baking powder
2 eggs, whisked
Two tbspn oil or melted butter
Half or quarter cup of honey (depending on taste)
1 and a half cup chopped strawberries
Preparation
1 Sieve and combine all the dry ingredients in a large mixing bowl.
2 Mix the egg, honey and strawberries together, and fold gently into the dry ingredients.
3 Spoon into an oiled muffin tin, and bake at 220C/450F/Gas 7 for 20 minutes.
4 Leave to stand for a few minutes before serving with clotted cream or butter. Makes 12.
This is a simple, quick and easy 'no weigh' recipe, and quintessentially English. Now, when's Wimbledon?
