PAUL SUTCLIFFE knows a thing or two about culinary techniques and he has brought his expertise to the New Forest as the new chef at the Montagu Arms in Beaulieu.
Paul has built his skills in some of the country's top hotels, most recently at the Royal Berkshire Hotel, where he was executive chef.
The high standard of his cooking has already netted him 28 golds, 17 silver, and nine bronze medals in top international culinary competitions.
In addition to competing, Paul's recognised and respected opinion means he is often sitting on various judging panels, marking the skills of other chefs.
Paul says he plans to take the reputation of the Montagu Arms to fresh heights by expanding the existing menu and implementing a variety of dishes that will appeal to all good food lovers.
General manager Terri Chichester said: "Our main aim at the hotel is to ensure our wide range of clientele is offered and provided with the best food possible across a variety of tastes. Paul's exceptional skills and imaginative menus both broaden and compliment the existing facilities we offer.
"While our main restaurant offers something fairly special, many residents and non-residents alike enjoy the delicious variety of food available in Monty's, our adjoining brasserie.''
