Winchester's Joe Marchant scored a bizarre try for Harlequins before Saracens came from behind to secure a sixth Gallagher Premiership win out of six.
Billy Vunipola's try and 20 points from the boot of Owen Farrell gave Saracens a 25-20 win.
But for many the match will be remembered for a remarkable second-half try from former Peter Symonds student Marchant Harlequins responded in astonishing fashion to an Owen Farrell penalty that took Saracens to witthin a point of the home side.
As Smith lined a penalty up, the wind got hold of the ball and Marchant leapt up to claim it, then dotted down upon landing for a surprising score.
Smith added the extras to give the hosts an eight-point lead that was soon overturned by the league leaders.
